- 2 cups cooked rice

1-cup refried beans

1-cup corn

2-7.75oz cans Dave's Albacore OR Salmon

1 medium onion, chopped

½ red bell pepper, chopped

Garlic to taste

1/2 cup grated cheddar cheese

1/2 cup grated Monterey Jack cheese

8 to 10 corn tortillas
-
1 can enchilada sauce
Mix first seven ingredients.
Fill corn tortillas with mixture, roll up and place in a baking pan.
Pour enchilada sauce over tortillas, sprinkle with cheeses
Bake at 350 degrees for 20-30 minutes.
