The Cannery at Dave's Albacore
When comparing Dave's canned albacore and salmon with other commercial brands--we stand alone. What sets us apart from the rest? Our commitment to bring you the highest quality and best tasting canned wild seafood ever! It all starts with our trusted fleet of experienced fishermen. Each vessel brings in wild catch using specialized hook & line methods. Each fish is handled very carefully to minimize bruising. They are then bled immediately after harvest to preserve the freshness of the fish as well as enhance the natural flesh color. Depending on the area of catch, the whole fish are flash frozen on the boat to below 32 degrees. When the fish arrive at our cannery they are thawed very slowly, rinsed and filleted.

Our uniquely old-fashioned canning methods assure our canned albacore and salmon to be a cut above the rest! It all starts by filleting the albacore loins and salmon fillets into choice 'center cuts'. The fresh fillets are then carefully hand-packed into each can and individually weighed. The lids are then steam sealed onto each can, and all the sealed cans go into a pressure cooker. This means that the fish it cooked while it is inside the can! This cooking method allows all of the natural fish juices and omega-3 oils to be retained--leaving an incredibly nutritious and moist fillet of fish. You do not get this benefit with conventional machine packed canning methods. In these machine-packed canneries the fish is baked before it goes into the can, so the machine can pack the dry flesh easily--which causes most of the natural fish juices and omega-3 oils to be lost. This is the reason behind the commonly seen "Tuna in Water"--the water is used to compensate for lost fish juices.
